Sautéed Flounder with Almond Cream Sauce
- 2 tablespoons unsalted butter
- 10 ounces flounder fillets boneless/skinless
- 1/3 cup flour
- 1 tablespoon olive oil
- 1/4 cup sliced almonds
- 1/4 cup dry white wine
- 1/3 cup heavy cream
- salt and pepper
Heat butter in a saute pan until it starts to brown.Dredge the flounder fillets in the flour and add to the pan.Sauté until light brown (about 2 minutes) and turn them over. Saute untl done 2-3 minutes.Remove the fillets from the pan and keep warm.Add olive oil and almonds to the pan and cook until light brown. Add white wine and reduce by half. Add heavy cream and reduce untll creamy and smooth. Add salt and pepper to taste.Arrange the sauce on plates and top with the flounder fillets. Garnish.
